It is a trip of firsts… and our first cook in Wally is no different. Learning where everything is and trying to figure out the new flow, but we did it! So tonight I came up with a lo-mein dish. The new induction top (Tru Induction) cooked great and had room for two 12 in skillets on it without issue. I wanted to do something different and as we looked for inspiration we came across an old packet of lo mein noodles.
The next step was what to do with it. Since lo mein is more or less a few veggies with a protein and a sauce over noodles…well. So I happened to notice the darling wifey had packed tilapia, we had some veggies on hand and well, the idea for a fish based lo mein was born.
So as most cooks do, I consulted the usual interwebs sites and put together something that seemed right in my head for a sauce, then it was go time from there. So the sauce:
2 Tbsp of Coconut Aminos
1 Tbsp of Low Sodium Soy Sauce
3 Tbsp of Oyster Sauce
1 tsp of Sesame Oil
2 tsp of plain simple syrup (not flavored).
3 cloves of Garlic grated into the mixture
– Mix with a whisk and set aside.
Next up the veggies. We used what we had on hand plus some mushrooms we grabbed from the local grocery store.
1 small container of sliced white mushrooms.
3 small sweet peppers (you know the little guys you buy in the bag at the grocery store)
1 slice of onion about 1/4 inch thick then diced.
1/2 a zucchini sliced then cut into quarters.
For the protein two frozen tilapia filets (thawed for cooking).
So with everything prepped, we drop the noodle in to cook, since we are in an RV I wanted to use as few pots and pans as possible. So into the first skillet, covere with water and boil for about 6 minutes. Drain, wash in cold water and set aside.
Next fry up all of the veggies in a small pat of butter (or your desired form of oil spray, oil, ghee, etc…). While that is going, clean that first pan, drop in the tilapia filets along with a small amount of water and butter. I added some garlic, roasted red pepper seasoning to give the filet some chance of taste. The filets were semi poached by the time they were done, which was the desired goal. A perfectly cooked buttery filet that broke apart into perfect chunks.
Mix the noodles into the veggies, stir in the sauce, combine well and then mix in the tilapia. Be careful to not smash the tilapia too small when mixing, so best to do that at the end. Plate as you desire then serve!
